During harvest, solely the stems with green mature berries are selected and hand-picked. On the same day, the bunches of pepper are de-stemmed so that the seeds can be carefully selected, washed and scalded, and ultimately left to dry in the sun for 2-3 days. This natural drying process contributes to the particular taste profile and aroma exclusive to Kampot pepper.
Finally, the peppercorns are selected by hand in accordance with the PGI standard. Only peppercorns measuring at least 4 mm and possessing a beautiful dark black colour may be sold as Black Kampot pepper.
