Description
White Kampot pepper is produced from the fully ripe red peppercorn.
It is a rare, fine and delicate product. The fully ripe red peppercorns are picked one by one from the bunch, and they are then washed, scalded and spent one night in a barrel with fresh water. The next morning, as a result of the submersion, the soft skin is then gently removed by hand, followed by a thorough washing of the white seeds, before being left to dry in the sun for 2-3 days.
Only corns with a nice light beige color and measuring at least 3 mm may be sold as ‘White Kampot pepper’.
